Nicole-Taylor’s Pasta + Market + Backroom Eatery has been making pasta since 2009. Our goal is to bring a Mediterranean-inspired culinary experience to Indianapolis that is delicious, in-season, and sourced from close by.

Fresh Made Pasta
You more than likely have enjoyed our pasta at one of your favorite restaurants already. We make our pasta fresh and provide it to dozens of Indianapolis restaurants and retailers.
We’re at the Carmel Winter Market every Saturday for their 2024-25 season.

Italian retail market with our very own house-made pasta and sauces, fresh mozzarella, charcuterie, and products imported from Italy.

Pasta, salads, and sandwiches for lunch in our restaurant available Tues-Sat 11a-3p.

Friday Aperitivo
Aperitivo is our pre-dinner Italian tradition with wine, beer, and light aperitifs alongside small plates, including meats, cheeses, vegetables, and other snacks. Aperitivo restaurant menu varies from week to week.
Come in 3-6p on non-First Fridays for a laid-back, pre-dinner, wind-down to your week. No reservations necessary.
Happy Hour drink specials from 3-5p.
How to Cook Our Pasta
The basics are important. Cooking pasta doesn’t have to be difficult. It’s easy to get consistent great results every time you cook Nicole-Taylor’s pasta.
Get your pasta out of the refrigerator or freezer just before you are ready to add it to your water. There’s no need for frozen pasta to thaw, and it’s best if the fresh refrigerated pasta is straight from the fridge when you add it.
Step One
Bring your water to a boil. We recommend salted water. Please do not use oil in your boiling water.
Step Two
Pull your Nicole-Taylor’s Pasta apart before adding it to your boiling water.
Step Three
Boil for approximately 3 minutes.
Step Four
Drain your Nicole-Taylor’s Pasta. Do not rinse.
Step Five
Add your additional ingredients and ENJOY!
Storage
Fresh pasta will last 7 days in the refrigerator.
Past 7 days, you can freeze your pasta for up to 2 months. Prior to freezing, we recommend storing in a freezer-safe bag. There is no need to thaw out frozen pasta; just place it directly from the freezer into boiling water.
